According to the specs, the 7100 has 100 MHz component video bandwidth. What does that mean? Does it have to do with the switching? Is it fast enough to handle 1080i? Can you even do 1080i through component cables?

Yes, you can do 1080i through component cables. According to this page, 1080i requires 37 MHz bandwidth, so you should be fine. You could even do 1080p which obviously requires 74 MHz.
For computer signals, check out the Video Bandwidth Calculator. Note that 100 MHz is kind of low for hi-res computer video. It is enough to transfer 1024x768@85Hz or 1280x1024@50Hz.
