I have the RSP1066 and would like to further EQ my individual speakers in a 5.1 setup. I've went in the setup menu, but didn't see a EQ section. The remote does have a Cinema EQ option, what does it do to the speakers exactly? I've noticed that it does sound a bit more flat with the EQ, but I'd like a more accurate EQ tuning for my speakers. Does any of the newer Rotel Pre's like the 1068 and 1098 have the capability to EQ speakers more flat?
Does any of the Rotel processors have EQ capability?

Aside from separate bass/treble on all channels, no. Any reason you're wanting to EQ your speakers flat? Without an RTA meter, 31 bands per channel, and some training; you're only going to do harm. If you're un-happy with your setup, try changing speaker placement, speakers, or equipment. An EQ is not designed to overcome any of that.
Cinema-EQ is a THX-esque filter that applies a high frequency roll-off to all channels to fix DVD's that were not re-mixed for home use (some rare these days).
