                          What do you think I'm working on right now? However, finish in 5 days.... mmm... one word: Crossovers.

                          I think there's a solid chance of having both cabinets structurally complete and having some measurements with drivers... any thing more is delusional on my part!

                                  Well, that should provide you with some good motivation...not that you really need any more.

                                  I decided I better get moving and took a couple new measurements. Got to try to keep up here.

                                    I got making 10# of sausage and some smoked cheese on my to-do list this weekend. Nice snowy day; should be perfect.

                                        Summer Sausage on the left and Salami on the right. They will go on the smoker sometime this weekend. The 1" will probably smoke for 5 hours. The 2.5" will probably smoke for 10 hours.

                                              Pete, you should give it a try. It is a great way to use all the trimmings from spare ribs, etc. All you need to start is a Kitchenaid grinder attachment - though if you like it, you'll want a real stuffer real fast. Fresh Polish and Italian are super simple.

                                                I have a Waring Pro meat grinder and I think it has a sausage stuffer tube but I never used it. Any good recipes for kielbasa?

                                                    I've spent the last two hours working on a coordination and mentoring plan for people that don't report to me, but that my boss wants me to coach. In the long run, it should make everyone more productive, but I'm getting it off early to them so they can think about it a little bit before I officially get back to work on the 7th.

                                                    And I think I am considering having another mild mid life crisis, and getting back into music a bit- likely buying a new keyboard in the next month or so. We'll see....

                                                    But good progress on the current project, even though I haven't been taking time to post- that will go into the official build thread when I get it up and know that i'll have something to show for it all...

                                                        Sounds like a good time!

                                                        We went out to our favorite metro/fusion Chinese place in the area, had a great dinner, and some good Chandon in the evening- a nice cap to a remarkable year!

                                                        Now the challenges of finishing up stuff from the old year and getting off to a new start at work, too... it's likely to be an interesting year all around.

                                                        And back to the sanding dust (all nicely captured now) and finishing fumes today! getting closer to being able to mount drivers in one cabinet for test, maybe Wednesday or Thursday! :B

                                                          I mostly use the recipes from this book. http://www.amazon.com/Great-Sausage-...7174691&sr=1-1 Typically very simple recipes.

                                                          Stuffing using a meat grinder is possible. I've done it twice. But, it is a pain. It is good to try and see if you like making sausage, but then you'll want a real stuffer. let me know if you try something.
