When the RDC-7 outputs a video signal, I assume it has to be the same cable type that is coming in.

For example, I can't have a VCR coming into VIDEO 1 through a composite input, and output it to my display through the Video 1 component outputs...I must use Video 1's composite out...correct?

Bascially that is true. Component in -> Component out; composite in -> composite out. However, according to page 16 of the "Instruction Manual":S-video sources can be viewed via the S-video or composite outputs, while composite sources can only be viewed through the composite output The RDC-7 does NOT "upconvert" composite to either S-Video or component nor does it convert S-Video to component.
